If you've ever scrolled past a cake that looked almost too good to eat, chances are it was made by AllieCakes. Based in NYC, Allison has built a cult following for her playful, nostalgic, and wildly creative bakes—think retro piping, dreamy color palettes, and cakes that double as art. Below, Allison shares her sweet beginnings, what inspires her, and the LAUNE behind her show-stopping creations.

1. Tell me about yourself and AllieCakes. How was it created?

AllieCakes started out in the most scrappy way. In college, my sorority sisters were constantly on the hunt for birthday cakes. There was one local bakery that made custom cakes, but they were always booked solid. I saw the opportunity and started filling the gap. Word spread, first through my sorority, then the whole student body, and eventually to the broader Dallas community. When I moved to NYC, I brought the business with me. Now, AllieCakes is a full-on brand known for designs and flavors that actually taste as good as they look.

2. What is the LAUNE (mood) of AllieCakes?

Feminine, ornate, vintage, whimsical, fanciful, fun, vibrant, happy and indulgent. Think Marie Antoinette meets a 1960s tea party meets the bold maximalism of NYC. Every cake evokes celebration and joy.

3. What’s your favorite cake and why?

My favorite cake I’ve ever made was the one for Brooke Shields. I loved that she was celebrating her entrepreneurial journey and it felt so special to contribute to that moment. I also have a soft spot for heart-shaped cakes, and adored the autumnal color palette we used. 

4. What do you love about New York?

The chaos and intensity. New York is alive in a way no other place is. It challenges you, humbles you, and inspires you. The people here are bold and unapologetic, and it pushes me to keep evolving creatively.

5. What inspires you?

So many things! 1970s wedding cakes, Marie Antoinette, 1960s pop art, Claes Oldenburg’s giant cherry sculptures, Danish fashion, maximalist interiors etc. I’m constantly inspired by fellow bakers too - New June Bakery, Disco Sugar, Bodega Bakes, Miss Mac’s Bakery. I love seeing how other artists interpret vintage trends and make them feel fresh.

6. What’s next for you and AllieCakes?

I’m developing a new product that I can’t quite talk about yet, but I’m very excited about it. Let’s just say it will help people bring AllieCakes energy into their own kitchens.
