Autumnal Recipes by Rachel Yanofsky

There’s something about fall that feels made for Rachel Yanofsky’s kind of cooking. Cozy, simple, and full of warmth, her plant-based recipes capture the essence of the season, comforting yet effortless. A self-taught chef and creator behind Rachel’s Jools, Rachel finds joy in crafting dishes that celebrate natural flavors and easy, everyday indulgence.

For LAUNE, she’s shared two autumn-inspired recipes that bring her signature approach to the table: uncomplicated, nourishing, and just the right amount of sweet.

Cabbage Salad

Ingredients:

  • Cabbage (sliced thin)

  • Frisee

  • 1 persimmon (sliced)

  • 1 apple (sliced)

  • 1 plum (sliced)

  • Dill

  • Chives

  • Lemon

  • Mustard

  • Olive oil

  • Salt & Pepper to taste

Instructions:

  1. Peel back the layers of cabbage, cut in half, and either shred or thinly slice. To add a little extra green, I love to add frisee lettuce so it’s a nice mix.

  2. This salad is so simple, but the fruit adds such a nice touch of sweetness, so we will add sliced persimmon and apple — and if one of these fruits isn’t available, get whatever looks good, you can’t go wrong!

  3. Chop up some chives and break off some dill and add it in.

  4. For the dressing, add olive oil, mustard, lemon, salt, and pepper, then mix it all together until smooth.

  5. Add your dressing, give a good toss, and enjoy.


Trail Mix

Ingredients:

  • Walnuts

  • Pumpkin seeds

  • Almonds

  • Macadamia nuts

  • Coconut-rolled dates

  • Goji berries

  • Chocolate chunks

  • Featuring mini Rachel’s Jools

Instructions:

  1. Mix all ingredients together in a large bowl.

  2. Portion into jars or gift bags.

  3. Decorate with a tag and ribbon for an easy, thoughtful holiday gift!
